Oxygenator

Boiling removes oxygen from the wort. Yeast needs oxygen to ferment. I have tried other solutions like splashing to oxygenate the wort but still I have seen batches that take 48 hours to start fermenting. When using pure oxygen, I have seen batches that start fermenting as soon as 5 hours after pitching

The oxygen supply is a tank of medical oxygen. I bought the cylinder on Ebay before I learned that you need a perscription from a doctor to get it filled. The welding oxygen tanks work just as well and don't need a perscription to refill them. Fortunantly, I have a doctor who likes my beer :)

I have a stainless steel stone that has millions of laser cut holes. This works like an aquarium stone except that the bubbles are much smaller and many more of them. I have this on the end of a plastic racking cane. Just before pitching the yeast, I stir the fermenter with this with the oxygen bubbling thru the stone.
